Kilchoman PX Sherry Cask Matured is one of the many references that you can currently purchase at Rumology.be, both online and in our physical store in Bilzen-Hoeselt. This Kilchoman PX Sherry Cask Matured is the first of a series of limited editions that matured completely in PX Sherry barrels.

The PX Sherry Hogsheads gave such a rich and sweet character that allowing the spirit to mature for more than 5 years was not an option. Sweet citrus notes and peat smoke combine beautifully with the ex-Pedro Ximénez barrels to create a multi-dimensional whisky.

Tasting notes :
• Nose : Sweet raisins, peat smoke, licorice and citrus notes
• Palate : Orange zest on brown sugar, citrus notes, dark chocolate and waves of sweet sherry.
• Finish : Long with raisins and dark chocolate on smoldering oak, spices and persistent influence of sweet PX Sherry.

About Kilchoman Distillery :
Kilchoman Distillery is a family run business, founded in 2005 by Anthony and Kathy Wills, it was the first new distillery on Islay in 124 years. Meanwhile, their 3 sons are also working; James, George and Peter at the distillery.

Anthony and Kathy insisted on a 100% Islay philosophy and reviving the basic tradition of farmhouse distillation. The choice to start a single farm distillery was therefore quickly made and is the main motivation behind the distillery. From barley to bottle in one location with skill, care and attention to detail.

Different landscapes (terroirs) are cultivated with an area of ​​2300 hectares around the ruined Kilchoman church. The steep hills to the south of the distillery are grazed by black face sheep and to the west the herd of Aberdeen Angus cattle is fed a combination of machair grasses and the pomace left in the stills after distillation. The most fertile land, 400 hectares in size, is reserved for the annual early autumn barley harvest.
